Leave the skin on to protect it while it’s roasting in the oven, then discard before you add it to your recipe. Roasting garlic cloves this way helps bring out the flavour. Carrots are a great source of beta-carotene and fibre. I added carrots to the recipe to not only help with the orange colour, but to add some extra health benefits to the dish. Similar to a pumpkin, it’s orange, fleshy pulp can have a sweet and nutty taste, which is amplified when roasted. Chopping butternut squash is easy: Just peel of the skin, slice the ends off, slice down the middle and chop into 1-1.5″ cubes. The butternut squash I used for this recipe was staring at me for the past couple of months, so I decide to finally turn it into a delicious soup–and I was not disappointed. One thing I like about winter squash is that they have a long shelf life. The coconut milk adds another depth of flavour to this dish (and helps cool it down if you added too much cayenne pepper)!
